Ingredients
5 Raspberries
5 Mint Leaves, more for garnish, if desired
Juice from 1/2 Lime
2oz Light Rum
1oz Simple Syrup
2oz Club Soda
Blueberries, for garnish, if desired
Directions
Combine raspberries, mint, and lime juice in glass and muddle.
Top with ice.
Add light rum and simple syrup to glass.
Top with club soda.
Sprinkle blueberries on top.
Notes
Raspberries do have little seeds, and if you wish to avoid these in your cocktail you can muddle the raspberries separate and strain the juice through a small mesh strainer, and add to the glass after muddling just the mint and lime juice.
If you don’t have simple syrup, it’s easy to make at home! Boil equal parts water and sugar, stirring until combined. Let cool before adding to cocktail. Store extra in a glass jar with a tight lid.
